These are my latest obsession. Zucchini fritters are super easy and look at that, they’re healthy! Only two ingredients plus spices.
Simply grate 3 or 4 zucchini into a strainer bowl. Cover with a paper towel and weight it down to draw out any moisture.
Meanwhile, whip up 2 egg whites until light and fluffy.
Uncover the grated zucchini and place into a mixing bowl. Add a pinch of salt and pepper and 1/2 teaspoon of nutmeg.
Gently stir in the fluffy egg whites.
Heat a shallow fry pan with a 1/4 inch of Grapeseed oil to medium high.
Using a tablespoon gently scoop up mixture and add to hot oil. Leave to cook until golden on one side. Turn over gently and fry until done. Remove from oil and place onto a paper towel. Eat straight away!
These are great for appetizers, or I’ve served them on Meatless Mondays along side Cauliflower Mash and a green salad.
