So Queso Fundido
Once again. I don’t profess to be an authentic cook. I just know what I like and I make it up as I go along.
This is inspired by Cafe Habanas Queso Fundido.
There’s one in Malibu and one in New York and they’re both amazing. But when I can’t get there… I do this at home.
Remove the casing from 1 or 2 fresh chorizo sausages. Depending on how meaty you want this dish.
Fry in a heavy based fry pan. I use a cast iron skillet and serve it straight from the pan.
When chorizo is browned, drain the fat from the pan.
When cheese is melted and sausage is completely combined throughout turn off the heat.
Add the following in layers:
1/2 bunch cilantro (coriander) chopped
1 tomato, diced
2 green onions chopped
1/2 green jalapeño finely chopped
Add a squeeze of lime juice and a light sprinkle of salt and pepper.
Serve with your favorite tortilla chips and a few forks. Dig in.
