So Queso Fundido

Once again.  I don’t profess to be an authentic cook.  I just know what I like and I make it up as I go along.
This is inspired by Cafe Habanas Queso Fundido.
There’s one in Malibu and one in New York and they’re both amazing.  But when I can’t get there… I do this at home.

IMG_0614Remove the casing from 1 or 2 fresh chorizo sausages. Depending on how meaty you want this dish.
Fry in a heavy based fry pan.  I use a cast iron skillet and serve it straight from the pan.
When chorizo is browned, drain the fat from the pan.

IMG_0611I’m lucky to have this cheese in my local supermarket.  And I know Wholefoods stocks it too.  But I have heard you can use mozzarella cheese or monterey jack too.   It needs to be a good melting cheese.

IMG_0642Add cubed or grated cheese to your skillet.  On low, cook the cheese until melted.  I stand and stir it pretty constantly otherwise it will stick to the bottom.

IMG_0608When cheese is melted and sausage is completely combined throughout turn off the heat.
Add the following in layers:
1/2 bunch cilantro (coriander) chopped
1 tomato, diced
2 green onions chopped
1/2 green jalapeño finely chopped
Add a squeeze of lime juice and a light sprinkle of salt and pepper.
Serve with your favorite tortilla chips and a few forks.  Dig in.
