Feta makes it better!

IMG_1883When we first had this stunning appetizer in a small fishing village in Greece,  I couldn’t believe how simple it was. Don’t be fooled though… the most delicious flavors come out of this one little oven baked foil package.

IMG_1882Place your favored block of feta into the middle of a large piece of foil.
IMG_1885Add sliced tomatoes, sliced red onion and fresh basil on top of feta.  Drizzle with Olive Oil and Balsamic Vinegar.  Sprinkle with salt and pepper. I also add red pepper flakes. 
IMG_1888Wrap neatly so that juices won’t escape and place into an oven heated to 400 F.  Leave to bake for 20 minutes.
IMG_1891Remove from oven and unwrap.  Serve with your favorite crackers or toast triangles.  You could also add some capers or black olives to the mix.  Make it your own!
