Feta makes it better!
When we first had this stunning appetizer in a small fishing village in Greece, I couldn’t believe how simple it was. Don’t be fooled though… the most delicious flavors come out of this one little oven baked foil package.
Place your favored block of feta into the middle of a large piece of foil.
Add sliced tomatoes, sliced red onion and fresh basil on top of feta. Drizzle with Olive Oil and Balsamic Vinegar. Sprinkle with salt and pepper. I also add red pepper flakes.
Wrap neatly so that juices won’t escape and place into an oven heated to 400 F. Leave to bake for 20 minutes.
Remove from oven and unwrap. Serve with your favorite crackers or toast triangles. You could also add some capers or black olives to the mix. Make it your own!
