I’ve been playing around with Cauliflower a lot these days. The best discovery so far is this au gratin.
It’s simply Cauliflower-ettes laid in one layer in a baking dish.
Whip about 3 to 4 egg whites until white and foamy.
I added cumin and salt and pepper. But it’s your choice.
Pour over Cauliflower and top with cheese of your choice. I added some grated cheddar and goats cheese.
Top with salt, pepper and red chili flakes. Plus some chopped green onions.
Bake until Cauli is soft and cheese has melted. About 20 minutes in a hot oven.
