In Australia we call this butternut pumpkin. Either way, I curried it and added chickpeas, coconut milk and tomatoes for a satisfying complete meal.
I’m the first person to advocate fresh is best. But sometimes you can whip up a meal fresh from the pantry.
I just spent a couple of days in the Wine Country of Southern California and had lunch at Industrial Eats. They’re turning out great food… I hope I do this salad justice.
